Hot smoked chilli sauce


    200g chillies
    3 garlic cloves, peeled

    100ml olive oil
    Juice of half a lemon
    1 Tablespoon sugar
    1 handful damp smoking chips


    1. Light a Cobblestone and wait a few minutes until it has turned grey. Or, if you don’t have a Cobblestone on hand, ready your briquettes in the Cobb Cooker.

    2. Place the damp smoking chips on the Cobblestone and then place the Grill Grid onto the Cobb Cooker.

    3. Place the chillies onto the Grill Grid and close the Dome Lid.

    4. Let these hot smokes for about 20-30 minutes until they are soft and browned.

    5. Remove from the Cobb Cooker and let them cool.

    6. Remove the stalks – they will slip off easily and place the chillies, garlic, olive oil, sugar, lemon juice and a pinch of salt into a blender. Pulse until well combined.

    7. If you are outdoors and have no electricity or blender, chop the garlic and chillies and add the ingredients, mixing well.

    8. This serves as a tasty addition to sauces or a fiery condiment.
