Hot smoked pork chops

    Serves 2

    Ingredients:

    2 good pork chops
    2 teaspoon fennel seeds
    2 teaspoon coriander seeds
    1 teaspoon dried organum
    Olive oil
    Salt and black pepper

    Directions

    1. To make the spice rub, place the fennel, coriander and organum into a pestle and mortar and grind them. Add a pinch of salt and black pepper.

    2. Oil the chops and rub the spices all over them. Let them stand, covered for a while whilst you ready your Cobb Cooker.

    3. Light a Cobblestone and wait a few minutes until it has turned grey. Or, if you don’t have a Cobblestone on hand, ready your briquettes in the Cobb Cooker.

    4. Place the damp smoking chips on the Cobblestone and then place the Grill Grid and the Fenced Roast Rack.

    5. Place the chops onto the Grill Grid and close the Dome Lid.

    6. Let these hot smokes for about 30-40 minutes, depending on the thickness of your chops. You don’t want to overdo them as they will become dry.

    7. Once done, you can take them off and rest them for 5 minutes before eating.

    8. This aubergine dish goes well with these chops, or enjoy with your favourite side dish
