Toasted coconut and strawberry S’mores

    Serves 6

    Ingredients:

    1 packet plain biscuits/cookies
    1 packet coconut marshmallows
    Strawberry sauce
    Crushed pistachio nuts

    Directions:

    1. Light a Cobblestone and wait a few minutes until it has turned grey. Or, if you don’t have a Cobblestone on hand, ready your briquettes in the Cobb Cooker.

    2. Place the Grill Grid and Fenced Roast Rack accessory onto the Cobb Cooker.

    3. Put a coconut marshmallow in the centre of each biscuit (do 7-8 at a time) and put them onto the Fenced Roast Rack. Cover with Dome Cover for 5 minutes until the marshmallows have begun to melt.

    4. Remove from the Cobb Cooker. They should be soft and collapsed onto the biscuit. Put them onto a platter and cover with some strawberry sauce. For a luxurious finishing touch, top with crushed pistachio nuts.
