The classic dish Osso Buco, all the way from Italy, is a rich and hearty dish that uses a very tough cut of meat (beef or veal shanks). The cooking process turns the tough meat into a deliciously tender meal.
Cooking time: 1 and a half hour
Ingredients:
- 4 x 200/250g Beef shanks
- 1 x Onion
- 25g Butter
- 1 glass of Dry Red wine
- 2 cups of Beef broth
- Parsley for garnish
- ½ a cup of Corn flour for dusting
- Salt & Pepper to taste
- Olive oil for frying
Serve with Rice, Maize Meal or any starch of your choice.
COBB Tip:You are welcome to add vegetables to this dish; carrots are a delicious addition!
Directions:
- Light the COBB with a CobbleStone When the CobbleStone is grey, preheat the Frying Dish and Dome Lid for 10 minutes.
- Add oil to Frying Dish
- Season with salt & pepper and dust the Beef shanks in the flour. Seal each side for 1 minute and set aside.
- Sauté the onion in the butter until translucent, then add the Beef shanks again.
- Pour the glass of red wine in wait a few minutes until the alcohol evaporates before adding the two cups of broth.
- If you want to add additional veggies, this would be the time to add them.
- Cook an hour with the Dome Lid on and the last half an hour without the lid.
- Serve with your choice of starch.
