Beef Shank Stew (Osso Buco)

The classic dish Osso Buco, all the way from Italy, is a rich and hearty dish that uses a very tough cut of meat (beef or veal shanks). The cooking process turns the tough meat into a deliciously tender meal.

Cooking time: 1 and a half hour

Ingredients:

  • 4 x 200/250g Beef shanks
  • 1 x Onion
  • 25g Butter
  • 1 glass of Dry Red wine
  • 2 cups of Beef broth
  • Parsley for garnish
  • ½ a cup of Corn flour for dusting
  • Salt & Pepper to taste
  • Olive oil for frying

Serve with Rice, Maize Meal or any starch of your choice.

COBB Tip:You are welcome to add vegetables to this dish; carrots are a delicious addition!

Directions:

  1. Light the COBB with a CobbleStone When the CobbleStone is grey, preheat the Frying Dish and Dome Lid for 10 minutes.
  2. Add oil to Frying Dish
  3. Season with salt & pepper and dust the Beef shanks in the flour. Seal each side for 1 minute and set aside.
  4. Sauté the onion in the butter until translucent, then add the Beef shanks again.
  5. Pour the glass of red wine in wait a few minutes until the alcohol evaporates before adding the two cups of broth.
  6. If you want to add additional veggies, this would be the time to add them.
  7. Cook an hour with the Dome Lid on and the last half an hour without the lid.
  8. Serve with your choice of starch.
