Ingredients:
- 200-300g Protein (fish, chicken, chickpeas etc.)
- 2 tbsp Olive oil
- 1 Brown onion diced
- 2 Garlic cloves finely diced
- 1 tin Coconut cream (400ml)
- 2 tbsp Peanut butter
- 1 tbsp Curry powder
- 1 tbsp Soy sauce
- 1 tbsp Stock powder (2 cubes)
- 4-6 cups Water
- Pad Thai noodles
- 1 bunch of Bok choy
- Fresh lime juice and coriander to serve
Directions:
- Using the COBB Frying Dish over a medium heat, add olive oil, onions and sliced protein, cook for 3-5mins or until cooked, set aside.
- Add garlic, peanut butter, soy sauce and coconut cream, stir well until peanut butter is combined.
- Add curry powder, stock powder/cubes, water and season. Place COBB Dome lid on and bring to a gentle simmer for a few minutes.
- Add Pad Thai noodles straight to the frying dish and cook for 3 minutes or until almost done.
- Add bok choy and protein back to the frying dish and stir through until evenly combined.
- Serve with generous squeeze of lime juice and coriander.
