Directions:
- In a large mixing bowl, whisk together the flour, sugar, salt, and instant yeast until well combined.
- Gradually add the lukewarm water to the dry ingredients, stirring with a wooden spoon or your hands, until a soft dough forms. The dough should be slightly sticky but not too wet. Adjust the water or flour as needed.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
- Place the dough back into the mixing bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
- After the dough has risen, punch it down to release the air. Divide the dough into equal-sized portions (about the size of a small fist) and shape each portion into a smooth ball.
- Place the shaped balls onto a lightly floured surface, cover with a clean kitchen towel, and let them rise for another 20-30 minutes.
- Preheat the COBB with lighting a CobbleStone and cover it with the dome for 5 – 10 minutes. In the COBB Frying Dish, heat enough oil to deep fry the vetkoek. The oil should be heated to about 180°C.
- Carefully place a few of the risen dough balls into the hot oil, making sure not to overcrowd the pot. Fry for 3-4 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove the vetkoek from the oil and transfer them to a plate lined with paper towels to drain excess oil. Repeat with the remaining dough balls.
- Serve the vetkoek warm, either as is or sliced open and filled with your favorite savoury or sweet fillings, such as mince, cheese, jam, or syrup.
- Enjoy your homemade vetkoek as a delicious snack or accompaniment to a meal!
- Note: Vetkoek can be stored in an airtight container at room temperature for a day or two, but they are best enjoyed fresh. If reheating, you can warm them in the oven, air fryer or toaster oven until heated through.
