Vetkoek

Ingredients:

  • 4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 packet (7g) instant yeast
  • 1 ½ cups lukewarm water
  • Oil, for frying

Directions:

  1. In a large mixing bowl, whisk together the flour, sugar, salt, and instant yeast until well combined.
  2. Gradually add the lukewarm water to the dry ingredients, stirring with a wooden spoon or your hands, until a soft dough forms. The dough should be slightly sticky but not too wet. Adjust the water or flour as needed.
  3. Turn the dough out onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
  4. Place the dough back into the mixing bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
  5. After the dough has risen, punch it down to release the air. Divide the dough into equal-sized portions (about the size of a small fist) and shape each portion into a smooth ball.
  6. Place the shaped balls onto a lightly floured surface, cover with a clean kitchen towel, and let them rise for another 20-30 minutes.
  7. Preheat the COBB with lighting a CobbleStone and cover it with the dome for 5 – 10 minutes. In the COBB Frying Dish, heat enough oil to deep fry the vetkoek. The oil should be heated to about 180°C.
  8. Carefully place a few of the risen dough balls into the hot oil, making sure not to overcrowd the pot. Fry for 3-4 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove the vetkoek from the oil and transfer them to a plate lined with paper towels to drain excess oil. Repeat with the remaining dough balls.
  9. Serve the vetkoek warm, either as is or sliced open and filled with your favorite savoury or sweet fillings, such as mince, cheese, jam, or syrup.
  10. Enjoy your homemade vetkoek as a delicious snack or accompaniment to a meal!
  11. Note: Vetkoek can be stored in an airtight container at room temperature for a day or two, but they are best enjoyed fresh. If reheating, you can warm them in the oven, air fryer or toaster oven until heated through.
